Sell Roti (Nepali Roti)



Ingredients:-

Rice - 2.5 Pound (or you can buy instant rice flour from market)
sell roti

Water or milk – Half liter (500 ml
gar – 2 cups
Cooking Oil – 1 liter
WheaGhee – 2 cups
Sut flour – one cup
Backing soda to make it big (if you would like to )- Half table spoon
Cardamom, cashew nuts 
Method
  • Wash and soak rice overnight, drain excess water.
  • Mix ghee and sugar and grind into fine paste. The paste should be fine and greasy (lesilo).
  • Continuously stir the mixture.
  • Cover it and leave at the room temperature for 1-2 hours to melt and mix all the ingredients
  • Heat pan with cooking oil. The pan should be deep enough to float sel and the base should be flat.
  • Watch for vapor/smoke from the oil or see the picking stick float on the oil.
  • Pour the not too thick batter as continuous ring into hot oil till they become brown/golden.
  • Confirm both sides are brown.

SAMAYABAJI (NEWARI FOOD)

INGREDIENTS:-
   
  1. Baji,cheura (beaten rice flakes)
  2. fried bhatamas (black soyabean)
  3.  aalu ko aachar
  4. buff chhoila and chicken chhoila (smoked meat )
  5. bodi
  6. saag(green leaves) 
    recipe heresaag
  7. rango ko masu ko curry (buff curry) 
  8. fried fish 
  9. alcohal( oila)

Aalu ra kera ko achar(potato and banana pickle)


ingredients

5 piece of potato
2 piece of bananas
75 gram sesame seed(till)
3 piece green chilies slit into half
salt to taste
2 spoon lemon juice
1/2 spoon fenugreek seed (Methi)
2 spoon vegetable oil
1/4 spoon turmeric powder
1/ cup gren coriander leaves finely chopped
Method:-
  • Boil the potatoes and bananas until they are cooked
  • peel the potatoes and bananas and cut them into one inch dice
  • roast the sasame seed in pan until the sasame starts to crackle and roasted smell comes out make sure you do not burn it black
  • Mix the potatoes, bananas, coriander leaves, sesame powder, lemon  and salt in a bowl
  • put the turmeric powder on top of the above mixed ingredients
  • heat the oil in a pan and once the oil is heated put the fenugreek seed(Methi) and let it be brown
  • turn of the flame and put the chilies on the pan.
  • pour the content of the pan on top of the turmeric powder.
  • mix all the ingredients once again

How to make Gwarmari

Gwarmari

Ingredients:-
gwarmari

1/2 kg Wheat Flour
Half spoon of Baking powder
2 spoon Turmeric powder
A pinch Coriander powder
A small bowl of Ginger paste
A small bowl of Garlic paste
vegetable Oil - 250 ml
Salt - as per taste

Method:-

Mix wheat flour, baking powder, turmeric,coriander, ginger, garlic and salt in a deep bowl
Stir the mixture properly till all get mixed
Pour water to into the mixture stirring it continuously
See that you get a good paste of the mixture (the paste should be medium - neither too thin nor thick, it should drop easily onto the pan while cooking)
Keep the mixture for about 5 hours to get good taste (you can cook it immediately also)
Heat the pan pour the oil, let the oil heat nicely (make sure that the mixture dough when cooking deep into the oil)
Take about a table spoon of the mixture and drop into the hot oil. You can cook several of them at a time. 
See that all the doughs puff up
Fry till they all become brown. 
Take those brownies out and soak the oil in a towel or a paper.


Gwarmari is ready for serve

Ingredients:-
   500 gm black lentils
   5 spoon sunflower oil
   3 spoon mined Garlic
   2 spoon paste ginger
   Salt according to your taste
   Meat 400 gm(chicken,mutton,buff)
   Turmeric powder 1 spoon
   egg 1 piece
Method:-
Soak the black lentil in water for a night. Wash off the skin and grind the lentil into fine paste (use as   less water as possible)
Add turmeric, ginger, Garlic,  eggs/ 4 spoon meat and salt and stir it properly
Heat Nepali flat pan (tawa), put half table spoon of oil

Take some cold water in a bowl

When the oil is hot put some water in your left pam, take a small ball shape in your right hand and spread

it a bread on the pan using your all your fingers

Turning both sides, if needed add some oil around the bara

Cover it and let it cook for sometime

When the bara is cooked it turns into golden brown.

 सुकुटीको अचार

Ingredients

१०० गाम्र पोलेको सुकुटी

१ चम्चा धुलो खुर्सिनी
हरियो धनियाँ काटेको
१ चम्चा तोरीको तेल
नुन (स्वाद अनुसार)
हरियो लसुन- एउटा

Method

पोलेको सुकुटीलाई सिलौटामा राखेर थिच्ने।
त्यसपछि नुन, खुर्सानी, लसुन, हरियो धनियाँ,
तोरीको तेल हाली राम्रोसँग मोलने।
अब सुकुटीको अचार तयार भयो।

Chatamari

Chatamari is a special Newari food of nepal. It is a kind of rice crepe. Chatamari is a round bread made of rice flour, sometimes topped with eggs. Sometimes Chatamari is called Nepali Pizza

How to make Chatamari

Ingredients:-

     Rice Flour-1 bowl
egg chatamari
     Lentil paste-1/2 bowl
     Salt to taste
     ½  cup Water

Method:-
 

Heat the flat pan on medium heat

Put the paste on the hot pan in rolling action making as thin of sheet as possible

Put all topping on the paste.

Cover the paste and cook in medium heat (chatamari is cooked from only one side)

Cook until the paste is done and serve hot. Use the damp cloth to wipe out any burnt left behind

Cook until the bottom gets crisp; turn over and cook the other side.
Remove the cooked pancake.
Chatamari is ready to set. Serve with or without any toppings.

how to cook a yomari

YOMARI
  Ingredients :

- Rice flour(600 grams)
- Sesame seed(– 50 gram)
- Molasses(Chakku -100 grams)

Utensils
  • Steamer
  • Big bowl
  • Soft piece of cloth
  • Pan
  • Spatula
Method:

- Mix rice flour with hot water and make dough. Cover the  dough with a warm and wet cheeze cloth and rest it for 10-15 minutes.
- Apply some oil on your both hands and shape the dough like as shown in picture but make sure that it is hollow.
- Fill it with mixture of molasses mixed with Sesame seed,  ground meet or whatever you like, then close the hole.
- Steam it for 20 min.
- Now it is ready to serve. Enjoy!
